摘要:
从实验室自制泡菜中分离得到6株乳酸菌,经生理生化试验和分子生物学鉴定为植物乳杆菌(Lactobacillus plantarum)。对6株植物乳杆菌进行评价,发现1株环境耐受能力较强、益生效果较好的植物乳杆菌Z22,其在人工胃液和肠液中的存活率分别为95.45%和45.24%,胆固醇脱除率为65.80%。植物乳杆菌Z22胞外多糖的抗氧化试验结果表明:酸性多糖EPS-S对1,1-二苯基-2-三硝基苯肼自由基(·DPPH)、·OH、超氧阴离子自由基(·O-2)均有较好的清除能力,分别达到27.75%、66.16%和58.00%; 中性多糖EPS-Z对这3种自由基清除率分别为24.02%、59.03%和45.20%,且EPS-S的抗氧化能力要高于EPS-Z。
