摘要:
黄曲霉素是一类剧毒的真菌毒素,具有极强的致癌性。它广泛存在于食品中,对其进行及时、快速、高效地检测和有效的分离,控制含量在允许的范围内至关重要。综述了黄曲霉素的毒理学效应机制,分析比较了各种检测方法,并提出了今后研究工作的方向,为此方向的研究提供参考。
